Every part of yeast is the best part!
While live yeast cells are used as probiotics, inactive dry yeast can be used for many different applications. Inactive dry yeasts can be whole inactive yeast, yeast fractions, obtained from the separation of yeast cell wall (YCW), or a yeast extract (YE). What’s more, inactive dry yeast can be a combination of all the above. This forms the yeast derivatives family. In animal nutrition, yeast derivatives can be used either as nutritional supplements and/or for their functional role:
- YCW are rich in mannanoligosaccharides (MOS) and β-glucans. They are documented for their ability to bind with undesirable bacteria in the animal’s gut and modulate immunity.
- YE are rich in protein, nucleotides, vitamins, and minerals. They can be used as a source of nutrients and as palatability enhancers. Such a small thing (μm) with so many benefits!
